As the sun sets it seems to be a race to eat dinner before it gets dark. I need some light in my life to enjoy my meals.
I re invented last nights leftover vegetarian Mexican casserole into tonight's taco salad.
On top of some mixed greens was some leftover casserole. Topped off with a little crushed Food for life lime chips, reduced fat cheddar cheese, and a dollop of Organic Valley's low fat sour cream.
This salad was perfection.
