Here's my finished project from this afternoon. Everything now has it's own container for storage. Now things won't get old or spill in the cupboard. It will also help me with meal preparation, and help me save money on groceries because I will be able to see exactly what I have.
It was such a beautiful fall day today, bright, crisp, and with a touch of warmth. I stopped at the fish market to pick up some local wild salmon.
The fish guy gave me what he considered a piece the perfect size for one serving. One serving, that looks like two to me. I made it into two servings, one for dinner tonight and one for lunch tomorrow. I seasoned the salmon with some dill, salt, lemon pepper seasoning, and garlic.
I roasted in the oven a very thinly sliced sweet potato and red potato. This has become my favorite way to cook potatoes lately. Both taters were seasoned with some oregano, Himalayan pink salt, garlic, and Parmesan cheese. I roasted the taters at 400 degrees for 45 min. They came out crispy, cheesy, and delicious. I added some broccoli just in the last few minutes of roasting. I also attempted to grill some peaches, but they did not turn out so well. I think the grill has to be VERY clean. They tasted charred and icky, so I didn't eat them.
The salmon was tender and delicious, it's been a while since I have had some fresh salmon.
