When Breakfast is your favorite meal, it makes it okay to have it twice in one day, even three times if you want. I wasn't very hungry for dinner given that I had a late lunch of a veggie sandwich. I looked at the pile of fruit ripening on the kitchen counter and pondered what to make with them. I decided upon pear apple oat crumble.
Dinner
I pre heated the oven to 350 degrees and begun peeling and chopping two pears and one apple. I mixed the fruit with a dash of cinnamon and 1 tsp. sucanat.
In a separate bowl I mixed a 1/2 cup oats, 1/4 cup whole wheat pastry flour, 1/4 tsp. baking soda, dash cinnamon and salt, 2 TB. pear sauce (you can use applesauce also) and 1 tsp. sucanat. After coating the loaf pan with cooking spray and dumping the fruit in I topped it with the oat mix and a drizzle of raw honey. I baked it for 30 min.

This little dish was so perfect, and because it's so healthy and wholesome it can be served as a snack, breakfast, side dish, or even dessert. It was so yummy and the combo of pears and apples were perfect. I made a small serving perfect for two people (it's very shallow in the loaf pan). I loved this recipe I created, it's going in the great big encyclopedia of personal recipes.
