Are shall I say the muffin lady, baking away in the kitchen this morning. I whipped up some whole wheat and flax blueberry muffins. I altered the mix slightly cutting down on the sugar by 1 TB. and the oil by 1 tsp. I also added one diced and smashed very ripe banana. The changes seem to have worked really well.
Resulting in a very moist and delicious muffin. I topped each muffin prior to baking with a crumble top. In the topping was 3 TB. Bob's
muesli, 1tsp. evaporated cane juice, 1tsp.
sucanant, 1tsp. melted Earth balance butter, and a dash of cinnamon. Mixed all together and sprinkled on top.
Enjoyed with an egg white omelet. I'm heading to the gym soon and this was a great breakfast to get me started.
