After work today I decided to go for a run. What better workout when you feel like you have the weight of the world on your shoulders. I feel like running for me is one of the best stress relievers. It gives me time to think about things. I always feel much more clear and focused when I get back. I ran 8 miles and did some legs and abs when I got back.
When I got home and after I showered and did some chores I was hungry for an early dinner.

Before heading out on my run I threw together in the crock pot the makings for lentil soup.
Lentil soup
1 cup red lentils
1 cup brown lentils
6 cups water
1 tsp. each of curry, oregano, garlic flakes
dash of salt and pepper
2 TB. Tj's roasted red pepper and eggplant spread
cook on high for 3 hrs.
At the end it was a little thick so I added about 1 cup vegetable stock. I forgot I had the veggie stock or I would have used that instead of the water to give the soup more flavor.
I liked the two different lentils. The red lentils thickened the soup and the brown lentils stayed whole.
If I would have had time and thought ahead I would have included some veggies in the soup.
I topped the lentil soup with some nutritional yeast flakes, Parmesan cheese, and Greek yogurt.
I also had some carrots with hummus.
